what you need...

1/2 cup water
1/2 cup light brown sugar
1/4 cup heavy cream
popsicle sticks or dowel
4-5 apples (or how much you need)
pecans (chopped)

what to do...

1. In a sauce pan, combine water and light brown sugar.
2. Stir gently over low heat until sugar is completely dissolved and mixture appears smooth.
3. Gently bring to a boil, then cover and simmer for 3 minutes, or until mixture turns into a thick syrup.
4. Remove from heat.
5. Carefully stir in the heavy cream.
6. Pierce the center of each apple with a popsicle stick or dowel.
7. Swirl apple in the caramel syrup until coated and roll in pecans.
8. Refrigerate at least an hour before serving.
