what you need...

1 whole chicken (cut into serving pieces)

for marinade:
4 tbsps. patis/fish sauce
1 tbsp. pepper
1/4 tsp. red chilli (flaked)
1/4 cup young sampalok / tamarind ( leaves or flowers)
3 tbsps. achuete oil

what to do...

1. Mix ingredients for marinade.
2. Rub the chicken with the marinade.
3. Roast the chicken on a spit over hot coal.
4. Serve while hot with your favorite sauce.
