what you need...

Chicken meat
alfalfa sprouts
cayenne flakes
1 tbsp. shallots (finely chopped)
2 cloves garlic (finely chopped)
1/2 tsp. lime zest
1 tsp. lime juice
1/2 pc. red bell pepper ( chopped finely)

what to do...

1. Season the chicken with some cumin and cayenne flakes.
2. Sear the chicken on both sides.
3. Refrigerate to cool.
4. When cool, dice the chicken meat.
5. Using a cocktail spoon ( or chips) , top some chicken and alfalfa sprouts.
6. Drizzle with sake-pepper mignotte.
